Banana Cake with Cornmeal Flour

Sofonie Dala is a young African woman living below the poverty line. Without an oven at home and with limited resources, she found a creative way to enjoy sweet treats: she bakes her cake directly on the stove. The result is astonishing — warm, fluffy, and full of flavor.

Recipe

Batter:

  • 3 eggs

  • 2 cups sugar

  • 1 cup milk

  • 1/2 cup oil

  • 2 cups all-purpose flour

  • 1 tablespoon baking powder

  • 7 ripe bananas

Topping:

  • 3/4 cup sugar

  • 1/2 cup hot water



Preparation

  1. Blend the eggs, sugar, oil, and milk in a blender.

  2. Gradually add the flour while blending.

  3. Add the bananas and baking powder, mixing well.

  4. Pour the batter into a greased pan and bake on the stove.

  5. Prepare the topping by caramelizing the sugar with hot water and pour it over the cake.



This cake is perfect for an afternoon snack, welcoming unexpected guests, or simply satisfying the craving for a homemade dessert.
